Week 3 – Okra Tomato Skillet

This simple okra tomato skillet uses fresh okra, heirloom tomatoes, and red onions from Sobrino Farms. Savory, rustic, and easy to prepare, it works as a warm side dish or served over rice for a simple farm-style meal.

Ingredients (serves 2–4):

• 2 cups fresh okra, sliced  
• 2 heirloom tomatoes, chopped  
• ¼ red onion, thinly sliced  
• 2 tablespoons olive oil  
• Salt and pepper to taste  

Optional: garlic powder or smoked paprika

Instructions:

1. Heat olive oil in a skillet over medium heat.
2. Add sliced okra and cook until it begins to soften.
3. Stir in red onion and cook until fragrant.
4. Add chopped tomatoes and season with salt and pepper.
5. Cook 8–10 minutes until vegetables soften and flavors combine.
6. Serve warm.
