This fresh grapefruit tomato salad uses Texas grapefruit, heirloom tomatoes, and red onions from Sobrino Farms. Bright citrus and juicy tomatoes come together for a refreshing dish that works as a light meal or simple farm-style side.

Ingredients (serves 2–4):

• 1 Texas grapefruit, peeled and segmented

• 2 heirloom tomatoes, sliced or chopped

• 2 tablespoons thinly sliced red onion

• 2 tablespoons olive oil

• 1 tablespoon vinegar or citrus juice

• Salt and pepper to taste

Optional: fresh herbs such as basil or parsley

Instructions:

1. Add grapefruit segments and tomatoes to a bowl.

2. Sprinkle with thinly sliced red onion.

3. Drizzle with olive oil and vinegar or citrus juice.

4. Season lightly with salt and pepper.
