Week 3 – Farmhouse Okra Fritters

These farmhouse okra fritters use fresh okra from Sobrino Farms. Lightly crisp on the outside and tender inside, they’re a classic Southern-style dish that works as a snack, side, or simple farm-style appetizer.

• 2 cups fresh okra, finely chopped

• ½ cup flour

• 1 egg

• ¼ cup milk

• 1 teaspoon baking powder

• Salt and pepper to taste

• Oil for frying

1. In a bowl, mix chopped okra, flour, baking powder, salt, and pepper.
2. Stir in egg and milk until a thick batter forms.
3. Heat a thin layer of oil in a skillet over medium heat.
4. Drop spoonfuls of batter into the skillet.
5. Cook 2–3 minutes per side until golden brown.
6. Transfer to a paper towel and serve warm.
