Week 4 – Crispy Smashed Red Potatoes & Radishes
These crispy smashed red potatoes and radishes use fresh red potatoes and radishes from Sobrino Farms. Roasted until golden and crisp, this dish brings out a mild sweetness in the radishes while keeping the potatoes hearty and satisfying.

Ingredients (serves 2–4):
• 2 cups red potatoes
• 1 bunch radishes, halved
• 2 tablespoons olive oil
• Salt and pepper to taste
Optional: garlic powder or dried herbs
Instructions:
1. Preheat oven to 425°F.
2. Boil potatoes until fork tender, then drain.
3. Place potatoes on a baking sheet and gently smash them.
4. Add radishes, drizzle with olive oil, and season with salt and pepper.
5. Roast for 20–25 minutes until crispy and golden.
6. Serve warm.
